Major Phospholipids of Selected Dairy Products as Determined by the HPLC-UVvis and 31P-NMR Methods

This study was carried out to determine the major phospholipids in selected dairy products (Beta Serum, Procream and Phospholipids-Rich Dairy products), evaluate accuracy of developed fat extraction method for liquid samples compare different obtained using HPLC-UVvis 31P-NMR methods. It found that can be used estimate lipid content were still a bit satisfactory. Using method, it sphingomyelin (SM) consists 2 curves Beta Phospholipid-Rich products. The phosphatidylethanolamine (PE) separated ahead phosphatidylcholine (PC) then PC SM1 SM2. results showed data (PC, PE SM) Butter as determined by compared well with those must noted analysis temperature at 40oC while 30oC, this might have also contributed slight variation results. Furthermore, is rapid cheaper cost method.
